海南鸡饭辣椒酱食谱(Hainanese Chicken Rice-Chili Sauce Recipe)


婆做的海南鸡饭一级棒,味道堪比老字号海南鸡饭店的味道。且记录其辣椒酱制作。


材料:
Ingredient:

小辣椒 20条 20 Chili padi
蒜瓣 4瓣 4 cloves garlic
柠檬汁 1粒(或酸柑汁)Juice of 1 lemon or lime
鸡汤 2汤匙 2 tbs Chicken broth
盐 半茶匙 1/2 tsp salt


方法:

 1. 蒜瓣去皮,切半,与小辣椒一同捣烂(或搅拌器打碎)。
Combine garlic cloves and the Chili Padi in an electric blender, process until fine.
2. 加盐,挤上柠檬汁,淋上鸡汤(煮全鸡的汤,取表层含油部分),拌匀备用。
Stir in lemon juice and chicken broth (stock that produced when boiled the chicken, scoop the small amount of fat floating on top of the stock) to the mixture, seasoning with salt and mix till dissolve.
